Think making ratatouille is something best left to professional chefs? Think again. Remember, this dish in the Disney movie with the rat was something mother used to make the aforementioned professional chef. This recipe is a sort of combination of the Juila Child & Joy of Cooking recipes.
You will need:
A couple of frying pans, or one really big frying pan
1 casserole baking dish
1 eggplant, sliced
1 zucchini or cucumber, sliced
2 cans of tomatoes (you can buy the kind with seasonings added if you like)
3 small onions, sliced
1 package pre-sliced peppers, red, green & yellow (or just red if you don't like green)
Saute' the eggplant and zucchini in several spoonfuls of olive oil for about 10 minutes. Add a little bit of red wine.
While the eggplant and zucchini are being saute'd, slice the onions. Preheat your oven to 400 degrees.
When the eggplant and zucchini are done, put them onto a large plate.
Saute' the onions in the leftover juices. Add more olive oil if it's all been used up. Add the peppers and 2 cans of tomatoes.
Throw in a couple of pinches of thyme and basil. Add sea salt and pepper to taste. Add a little more red wine.
Saute' this combination of veggies for about 8 minutes.
When this is done, place in a good-sized casserole dish. Layer alternating with the eggplant & zucchini, and then the tomato/onion/peppers until you are done.
Bake at 400 degrees for about half an hour in your casserole dish.
