I like to jazz up my stir fries with interesting seasonings.
You will need:
Large frying pan
Olive oil or cooking oil of choice
Bok choy, about 2 cups
Tomatoes -- I used an heirloom tomato
Small portabello mushrooms, 4, sliced
1 tsp. minced garlic
1/2 cucumber, sliced
1 avacado, peeled and cut up
1 lime, sliced
1 pkg. shirataki noodles, drained (these are made from tofu)
Red or white wine, about 1/4 cup
1 tsp. lemon peel
2 tsp. herbs de province
Cook all until done. How vegetarian/vegan this is depends on your wine as some manufacturers filter wine through animal products. Google your wine source if you care about this.
