I bought a package of chicken wings because they were less expensive than chicken breasts at the time. Here is my recipe (very loosely based off a Good Housekeeping recipe for chicken breasts).
You will need:
Butter or olive oil
1 shallot, finely diced
1 orange, peeled
1 tsp. lemon juice
Rubbed sage (a couple of pinches will do). You could also substitute basil or parsley.
Sea salt to taste
Rice or pasta to serve with it
1/4 cup red or white wine (actually now that I think about it, brandy would be really good with this recipe)
Cook your rice or pasta on the side. I used the veggie spiral kind:
If using butter, melt it in your frying pan before you cook the chicken.
Squeeze a bit of orange juice into the frying pan. Then separate the slices. Add chicken, shallots, wine or brandy, and orange slices. Then add the tbsp. of lemon juice, rubbed sage, and sea salt.
Saute' until chicken is done. It should look something like this:
